Abdal Simit Bakery 1969

The first bagel in Abdal Simit Bakery was cooked in 1969 by Güray ŞAHİN’s father Resul ŞAHİN on wood fire. The history of Abdal Simit Bakery, which still continues to use wood fire, dates back centuries according to some researches. Some people associate the name of the bakery with Abdal Mehmet, one of the dervishes who is said to have helped Osman Gazi before and during the conquest of Bursa. Of course, in those days, this bakery baked loaves of bread, not bagels… A history based on a legend with strong religious stories… The bakery is located in today’s Tuzpazarı Neighbourhood, right opposite the Abdal Mehmet Tomb.

Production under the name Abdal Simit Bakery started in 1969. Although it is said to have been operated as a bread bakery until 1969, it is also said to have remained an empty bakery. After 1969, the first bagel is started to be produced by Resul ŞAHİN. Bursa’s most beautiful bagels meet with the public in this bakery. After Resul ŞAHİN, his son Güray Şahin continued his father’s profession and operated the abdal bakery. The bakery continues to preserve its splendour as it was in the past. When we look at the current structure of the bakery, we can conclude that it is not a historical place. This is very natural, because the area where the bakery was located was demolished in 2007 as part of the square organisation project of Osmangazi Municipality. The square organisation was completed in 4 years and the furnace started to burn again in 2011…

Raif KAPLANOĞLU also mentions the bakery in his book ‘Bursa with its Natural and Monumental Works’ as follows: ‘The simit shop next to Abdal Mehmet Tomb. In the 16th century salnames, the bakery next to the tomb is also mentioned. The road passing between this bakery and the mausoleum was a silk road and was very busy. travellers usually stayed here.‘’

The bakery, which also has a brand registration and food production permit, is a place where many local and foreign tourists coming to Bursa from outside, as well as celebrities, do not pass by without stopping by.

When ‘bagel’ is mentioned in Bursa, the conversation eventually comes to Abdal Bakery, one of our historical places that survived as a name.

Ender Baklava 1947

It was founded in 1947 by Necmettin Usluy, the nephew of Hacı Mecit, the first dessert maker of Bursa. The production and sale of desserts, which have been carried out meticulously for years, have been continued by the next generations. In 1999 Bademli, in 2002 Geçit, in 2014 Özlüce and in 2016 Nilüfer Kristal Park branches were opened.
It has ISO 9001, ISO 18001 and ISO 22000 and ISO 14001 certificates. It also has Halal Food Certificate and GMP certificate with practices that prevent products from being exposed to internal and external pollution.

Akay Çiğbörek and Mantı Salonu 1962

With the 93 War (1877-1878 Ottoman – Russian War), their grandfathers, who came to Turkey from Crimea, respectively; Istanbul – Şehremir, Bursa – Kayhan Bazaar, Aynalı Bazaar and finally in 1962, they started to operate this shop in the Old Bakırcılar Bazaar.
4th generation İsmail Temizkan, following in the footsteps of his grandfather, continues his service between 10:00 – 18:00 every day in his historical, small, shabby and clean shop. Since 1962, they have been serving real rawbörek with water inside and Tatar Manti made in boiled water to the people of Bursa and guests from outside the city.

Founded in 1963 by Hasan Erdihan Hınçalan, Çiçek Izgara has preserved its special products on the menu over the years and has managed to offer them with the same taste and service. The brand’s locomotive product ‘Çiçek Grilled Meatballs’ has become a Bursa classic with its flavour and presentation.

Ülkü Patisserie 1967

A 55-YEAR FLAVOUR STORY FROM GRANDFATHER TO GRANDSON

Ülkü Patisserie, whose story started in 1967, started with Numan Büyükyanbolu, who was born in Bursa -Yenişehir, and his wife Ayten Hanım, producing pastries, tahan pita, walnut Turkish delight and various sweet and salty cookies in a 15 m2 workshop. The journey of flavour, which started in the less favourable conditions of that day, continues to serve for 3 generations from grandfather to granddaughter with the same quality and excitement with its 850 square metre production facility and 4 branches in various districts of Bursa.

The recipes created as a result of years of experience are not changed again, so that the standard of flavour has never deteriorated since the day the patisserie was opened. In addition to the flavours they have been producing for many years, it continues to increase its product range day by day by adding today’s flavours to its menu.

Gök Ada Kayhan Historical Cantıkçısı 1968

In 1955, while 2 brothers were continuing their lives by making pastry in Tayakadın, in 1968, they decided to do cantık business in Kayhan Bazaar. the first cantiks were long and smaller. Afterwards, the tradesmen in Kayhan Bazaar started to make round cantiks.
